DVD Editing help needed

I'm working on a Top Secret project.

I'm merging several sequels into one movie.

Now I have the basics...

Intimate knowledge of the movies

Story board

I have even made a basic cut

But I cant seem to figure out how to separate the audio and video so that I can have audio from scene a overlap video from scene b.

any advice, program recommendations etc. etc. will be appreciated.

I also don't know how to make menus.

I would be willing to give a copy to those that help if they can prove to me they own the movies.
