Ducks and geese. I do a decent job when I stir fry prepare them, but cannot get past the "gaminess" any other way.

Hot enough that I must drink half a gallon of whole milk with it and wind up screaming six hours later as it leaves me, but not quite as hot as the cooks will eat it.
