It starts with wine and a small plate of cheeses nicely paired with various fruits, fresh and dried. Then a nice plate of bitter greens and a tart vinaigrette. Next, a simple root vegetable soup with a spare broth, paired with a light dry white wine (very small glass) followed by a richer, spicier fish bisque. Then a rest. A cup of coffee and a stroll. Maybe some live music and dancing. When returning to the table, I hope to be greeted by a plate filled with roasted meats and green vegetables, accompanied by hearty dark chewy bread. There must be a good deal of gravy to go with the bread. Red wine, something with nice tannins and a peppery finish should go with this. Next, a slow course of crispy bird like partridge and a small potato dish to be eaten cold. Conversation should dominate this course. Next, sorbet. And to finish, roasted pears in a sweet glaze. Mmmm.

Funny thing, that: fettuccine with wilted spinach and prosciutto in a simple cream sauce. Plus two tiny venison medallions and crab stuffed mushrooms, steamed green and wax beans, flan for dessert.
