Whippet cookies

Whippet cookies first came to the market in 1927, but they had already been produced and distributed by Viau under another name, "Empire", as early as 1901. Whippets are still produced in Montreal at the east end Viau factory, which is now owned by Culinar Inc. As in 1901 they are still coated in a hard shell of pure chocolate, which easily melts at body temperature. Opening a box of Whippets immediately sends a very marked odor of chocolate in a room. They are close cousins to the Mallomars of New York City, but unlike Mallomars, Whippets are produced year long, given that Montreal and its surrounding areas have a lower average temperature than New York.

The whippet cookie is a distinct part of Quebec culture because it does not travel well outside its original geographic area. In addition to the fact that it melts very easily (compared with most chocolate cookies, which are usually made of a composite and not pure chocolate) and thus has to receive special treatment during transport in the summer, the combination of the hard chocolate shell and the air-filled inner marshmallow make it self-destruct when it is placed in the unpressurized or semi-pressurized cargo section of an airplane.
