I have no issues with humans "playing god" per se... hell, the real one doesn't seem to have done that great of a job. But I am against doing this kind of thing just because "we can", with no apparent thought given to possible consequences. Also seems to be rather cruel to the putative mammoth- where/how would the poor thing live? These were herd animals, and if they were at all like elephants had a complex social structure. A single one would be dreadfully lonely, and emotionally unbalanced as a result.
