also worth a look is demons and wizards who are a colaboration between members of bling guardian and iced earth

Love their coers of The Beach Boys - Surfing USA, Mr. Sandman (forgot the original artist), and The Wizard by Uriah Heap (sp?).

I wouldn't call them metal though, or at least not pure metal. I think of them more as LOTR Metal or as I like to call that genre "fantasy metal".

If you like them I strongly reccomend Amorphis, Chaos Opera, Children of Bodom, Covenant of Norway, Crematory, Darkwell, Dream Theater, Einherjer, Entwined, Flotsam & Jetsam, Labyrinth, Luca Turilli, Nightwish, Rhapsody, Savatage, Stratovarius, Symphony X, White Skull, Within Temptation, and Yngwie J Malmsteen's Rising Force

Most of that has lyrics you can understand (non black metal) and/or has great guitar work.
