kellygrrrrrl Posted November 23, 2005 Posted November 23, 2005 USE A REAL PUMPKIN! NOT THE CANNED STUFF! Take Pumpkin, cut in half - A small to medium sized pumkin that sounds solid when hitting it. Split in half and cover with foil,. bake at 375 for 45-60 minutes. (Until pumpkin easily falls off of shell.) Remove pumpkin from shell and mash. 1 Cup Sugar 1 tsp salt 1 1/2 tsp Cinnamon (I usually add a dash more ) 1 tsp Allspice 1 tsp Clove 1 tsp Ginger 1 tsp Nutmeg 1 Cup of mashed Pumkin - I usually add about another 1/4 cup to thicken it 2 eggs Bake at 475 for 15 minutes, then reduce heat to 325 and bake for another 45 minutes This recipe makes 2 pies! Excellent and easy, and really really damn good! I prefer to use a Shortbread crust rather than graham.
kellygrrrrrl Posted November 23, 2005 Posted November 23, 2005 Oh yeah, I should add - when you cut the pumpkin remove the seeds and just the stringy stuff.... Soak seeds for 1/2 day - spread on cookie sheet - cover with GARLIC salt and bake at 375 until crispy golden brown!

Medea Posted November 25, 2005 Author Posted November 25, 2005 Oh! Steven! Thought I should let you know. There was indeed some Bean Pie at the Thanksgiving I attended. Thought you might like to hear that. Unfortunately, I forgot to ask for a recipe. It was surprisingly good.
