saganaki is a greek dish sometimes referred to as Opa! or flaming cheese. the type of cheese used is kassari and it is breaded in egg and flour then fried. Next you either leave it in the pan or transfer it to hot plates to add brandy to and set aflame. oh yummy! Best if finished off with a squeeze of lemon wedge. Usually eaten with pita bread or a soft bread with a thick hard crust. I go with french bread myself with a hard crust. On to the TMI track I go!
